Mexican Coleslaw

Have you ever had Mexican coleslaw? Well, I hadn’t, until my friend Cory shared her recipe with me. It’s a crunchy, colorful slaw, with a distinctive Mexican flavor. It’s unlike any coleslaw I have ever eaten. When Cory takes her Mexican coleslaw to potlucks, it never fails to receive raves and recipe requests. This is one recipe you’ve got to try!

I can’t post Cory’s recipe without giving her props. She’s been a true friend, supporting me in my website endeavor. Cory is a straight talking, horse loving, Montanan,  whose cooking style is traditional, yet creative. I’m sure this is the first of many, of her recipes, that I will post.

Mexican slaw ingredients

Cory’s Mexican slaw contains ingredients you wouldn’t usually expect to find in coleslaw. There’s celery, corn, and red onion for crunch, along with cilantro for flavor.  The dressing is not your standard mayonnaise, vinegar, slaw dressing; but rather, a tasty, Ranch dressing with lime juice and cumin. And, there’s cheesy, nacho Doritos sprinkled on top. You don’t find that in your typical coleslaw!

Both the salad and the dressing can be prepared ahead of time, making this a convenient dish for dinner parties and potlucks. This is also a recipe that can be adapted to one’s own taste by adding more or less of any ingredient. Add as few, or as many, of the crushed Dorritos as desired.

Mexican Coleslaw

Servings 8-10

A colorful coleslaw with Mexican flavors, topped with crunchy, cheese Dorritos.



  • 1- 16 oz. bag coleslaw
  • 1/2 - 3/4 cup diced red onion
  • 3/4 cups chopped cilantro
  • 2 stalks chopped celery
  • 1-10 oz. can Mexican Corn
  • crushed Nacho Dorritos (for topping the slaw)


  • 1 packet Ranch salad dressing mix
  • milk or buttermilk (for the ranch dressing mix)
  • mayonnaise (for the ranch dressing mix)
  • 2 tablespoons fresh lime juice
  • 1 1/2 teaspoon ground cumin


Step 1. If the packaged slaw is coarsely chopped, cut it finer with a long blade knife or pulse it in a food processor.
Step 2. Mix all the salad ingredients together in a large bowl.
Step 3. Mix the Ranch dressing according to package directions. Add the lime juice and cumin.
Step 4. Just before serving, toss the salad with 3/4 cup of the ranch dressing; top with crushed Dorritos.

Special Notes:

If you like a fresh, crisp coleslaw, dress the salad just before serving. If you prefer a softer, creamy slaw, apply the dressing several hours before serving. In either case, add the crushed Dorritos just before serving, so they remain crisp. -  This slaw is a perfect topping for fish tacos!
