Glazed Pumpkin Cookies ~ Santa’s Favorite

Glazed Pumpkin Cookies

stars2I leave these pumpkin cookies out for Santa on Christmas Eve. ~ Every year, he leaves a clean plate, not even a crumb left.

The recipe for these cookies was given to me way back in 1973 by my college, freshman roommate, Allison Chenoweth. I’ve made them every year since. It’s not Christmas without a batch of these glazed pumpkin cookies. They are a soft cake-like cookie, covered with a sweet, buttery glaze. Tasting like pumpkin pie spice and looking like snow capped mountains, these cookies are  ideal for the Holidays.

drop cookie

I usually make several kinds of cookies at Holiday time. When I’m baking tons of cookies, it’s nice to have one recipe that is fast and easy. This is a drop cookie. I don’t have to roll the dough into balls or cut out shapes with cookie cutters. I simply gather up a teaspoon of dough and slide it onto the cookie sheet with my finger.

The dough bakes up into soft little pillows.

The glaze is  made from butter, milk, powdered sugar and vanilla. I don’t frost the cookies. I dunk them into the warm glaze.

I pull the cookies out of the glaze, give them a little shake to remove the excess glaze, and  . . .

Glazed Pumkin Cookies rack “voila” they are done. Rather than wait for the glaze to harden, I place the cookies, in a single layer, into the freezer. When the cookies are frozen, I stack them in air tight containers. I store the cookies in the freezer, taking  them out as I need them.

I do hope you will try these glazed pumpkin cookies. I’m sure they will become one of your Holiday favorites. My sister Emily and her children make them regularly. In her house they are know as “Aunt Lisa’s pumpkin cookies”. It’s nice to know that I am in their thoughts as they enjoy making and eating my delicious pumpkin cookies.

Happy Holiday’s
