What’s Cincinnati chili, you ask. It’s a deliciously spiced chili that is served over spaghetti, then topped with shredded cheddar cheese and chopped sweet onion. Hey, it’s not that crazy. Just think of the chili as spaghetti sauce, and the cheddar cheese as Parmesan cheese.chili peppers

Remember that pot of Spicy Ground Beef Chili  I made a few months ago? I don’t mean to boast, but I think that was the best batch of chili I’ve ever made.

 

boxed chiliThose containers of chili I boxed up and froze have come in very handy on nights when I’ve come home from work and I don’t feel like cooking. I was down to my last container this week. It was the one to which I had added a pinch of allspice, cloves, and cinnamon, 1/8 tsp. cayenne pepper, a dash Worcestershire sauce, and 1 tsp. apple cider vinegar. Those spices transformed my regular chili into Cincinnati chili.

 

Cincinnati Chili Plate

I let the chili defrost while I was at work. At dinner time, I boiled some pasta, heated up the chili, shredded a bit of cheese and chopped a little  onion. Presto! In no time, I had one big plate of yummy comfort food!

I grew up in central Ohio and my sister Emily actually lives in Cincinnati. That’s how I’ve come to know about Cincinnati chili. There are several popular chains like Skyline Chili that have made Cincinnati chili famous. Emily told me that my niece, Lindsay, has a favorite dip mixture that she makes with Sky Line chili. I’m looking forward to trying Lindsay’s Cincinnati chili dip the next time I make a batch of Cincinnati chili. Hope you will give it a try, too!

Cincinnati Chili Dip

Ingredients

  • 8oz softened cream cheese
  • 13-15oz Cincinnati Chili
  • 1/4 cup diced onion (I recommend white or sweet onion)
  • 12oz shredded cheddar cheese

Directions

Step 1. Spread softened cream cheese evenly in a microwavable casserole dish
Step 2. Heat chili. Pour chili over cream cheese.
Step 3. Sprinkle the diced onions and cheddar cheese over the chili.
Step 4. Heat in a 350 degree oven for 10 - 15 minutes or until cheese is completely melted. Or, microwave on high for 2 minutes or until cheese is completely melted.
Step 5. Let stand 5-10 minutes before serving. serve with nacho or corn chips.
